Italy is all about the food, so tonight we’re experiencing an intimate gourmet food and wine pairing downstairs in a cellar right by the Pantheon. So the restaurant is a family-owned business in a building that once used to be a horse stable. Welcome to ancient Roma, ah?

The experience is about how to match food and wine together to have the best culinary experience. So this particular vineyard in Sicily is very close to a volcano, hence there’s a lot of minerality in the wine. And this is a perfect pairing for our first course of pasta cacio e pepe.
Tonight was fabulous. Food was great, the wine was great. Really had a good time. So this is beef cheek on a bed of mashed potatoes.
It’s cooked to perfection. You don’t even have to chew the meat. It just melts in your mouth. I just love tours like this because it’s a great way to get to know people over some wine, some food and of course some good times.
I just loved our dinner. We had a three course meal with just the best group of people. It was intimate, it was fun, and we got to experience some authentic Italian cuisine.
